As the Head Chef, you will lead the culinary team in delivering exceptional dining experiences aboard our vessel. You will manage the daily operations of your designated kitchen and hotel provisions, while overseeing all food offerings, including group menus and special requests. Your role will involve conducting inspections, training staff, and ensuring that all culinary standards are met.
You will report directly to the Assistant Manager Food Operations.
Responsibilities:
Adhere to company recipe guidelines, conducting regular audits to ensure quality and consistency.
Achieve food cost budgets and targets set forth by the Food Manager on board.
Utilize the Materials Management System (MMS) for efficient ordering, accommodating up to 3,000 meals daily.
Manage inventory control, including par levels, turnover, and replenishment of supplies.
Monitor culinary equipment maintenance and report needs through the onboard maintenance request system.
Organize and lead staff meetings to encourage team collaboration.
Oversee buffet, a la carte, production, and line service responsibilities.
Provide strong leadership to your team, managing personnel files, conducting performance reviews, ensuring compliance with Marine Labor Convention (MLC) standards, and fostering crew development.
Basic Qualifications:
A minimum of 4 years in a leadership role within a high-volume culinary operation in a hotel or restaurant setting.
Certified Chef or equivalent degree in Culinary Arts.
Proven career progression in the culinary industry, demonstrating versatility and expertise.
In-depth knowledge of food and beverage products, services, and equipment.
Ability to calculate and control cost projections, understanding their impact on the overall budget.
Experience in crafting and implementing high-quality menus based on seasonal availability.
Proficient in writing and costing recipes, training team members to uphold the highest standards.
Possess strong leadership skills to manage a diverse culinary team.
Demonstrate initiative and resilience under pressure to meet tight deadlines and financial objectives.
Excellent written and verbal communication skills.
A college degree in Culinary Arts is preferred.
